Authors of "One Souffle at a Time"

Anne Willan was still in her 20s, a Yorkshire girl with an economics degree from the Cambridge University and a certificate from the Cordon Bleu, when she landed a dream job—running the kitchen at the The Palace of Versailles. There she prepared lavish spreads for the Duke and Duchess of Windsor and Charles de Gaulle, among other luminaries. From Paris, Willan moved on to New York’s Gourmet Magazine, to dinner parties where she whipped up soufflés for one of the earliest food denizens, Craig Claiborne. Only a few years later, Julia Child invited Willan and her husband to dinner—the beginning of a lifelong friendship. 

By the time Willan was in her mid-30s, when the Cordon Bleu was the only game in town (the town being Paris), Willan founded the legendary La Varenne Cooking School that trained many of today’s most well-known food writers and chefs. In her new memoir, "One Souffle at a Time" (St. Martin’s Press; September 17, 2013), Willan offers up generous portions of life stories and recipes to delight foodies and Francophiles alike.

"One Soufflé At A Time" bubbles with warm, funny, and never-told stories of the world’s most well-known foodies, from Child and her co–author Simone Beck, to James Beard, Richard Olney, and more. "One Soufflé" is also a fish-out-of-water story about a typical Englishwoman’s determination to invade the insular male French culinary establishment and create an institution that welcomes female chefs.

Featuring fifty recipes—from Coquilles St. Jacques to Chocolate Snowball—and written in Willan’s open, sharp, fast voice, One Soufflé At A Time is a memoir from the last big personality of a culinary era waiting to be heard.

ANNE WILLAN grew up in England and taught cooking in London and Paris before founding La Varenne in 1975.  She was an editor at Gourmet and food editor of the Washington Star.  Under her cheerful, no-nonsense instruction, anyone could learn to truss a chicken, make a bernaise, and loft a soufflé.  Willan’s more than thirty cookbooks, including The Art of French Provincial Cooking and the seventeen volume Look & Cook series influenced tens of thousands more who could not travel to France to study with her.

On May 4, 2013, Anne Willan was inducted into the James Beard Foundation's Cookbook Hall of Fame for “body of work,” honoring her celebrated lifelong career as a chef, cooking teacher, and author. She lives in Southern California.
